If you have ever watched a Kenyan or Ugandan aunt cook, you know the moment. The onions have gone soft, the tomatoes have collapsed into the oil, and then a small sachet is torn open and shaken into the pan. What is Royco mchuzi mix?

Mchuzi is Swahili for stew or gravy, so mchuzi mix translates almost literally as "stew mix." It is a savoury seasoning powder built on a salt-and-spice base, sold in sachets and tubs, and used across Kenya, Uganda and Tanzania the way a stock or bouillon cube is used elsewhere. Stir a spoonful into a pot and the sauce goes from thin and flat to deep, brown and rounded.

It matters because East African home cooking leans on long, patient stews — mchuzi wa nyama, chicken stew, groundnut sauce, beans. Royco is the shortcut that gives those pots their familiar backbone on a weeknight. It is not a replacement for real onions, tomatoes and fresh spice; it is what goes in after them.

The Royco family: which pack do you need?

Most people arrive knowing they want "Royco" and then find there are several. The short version: pick your protein, then pick your size.

If you are cooking for one or two, start at 250g. If your pot feeds a household every evening, the 500g tub is the better buy per gram and it keeps well in a sealed cupboard away from steam.

How Royco is actually used at home

The mistake newcomers make is treating it like salt and adding it at the end. It works far better early, in the fat.

  1. Build the base. Fry onions in oil until properly golden — not pale. Add garlic, ginger and tomatoes and cook them down until the oil separates.
  2. Add the Royco to the base, not the water. Sprinkle in a teaspoon or two and stir for thirty seconds. Toasting it in the fat is what deepens the flavour.
  3. Then add liquid and meat. Simmer low and slow. Add a splash of hot water if it tightens.
  4. Taste before you salt. Royco is already salted, so season at the end, not the beginning.

Our rule of thumb: about one teaspoon per 500g of meat, or one cube per pot of rice or greens. You can always add more; you cannot take it out.

Is Royco the same as a stock cube?

They do a similar job, but Royco mchuzi mix is a spiced powder rather than a plain bouillon — it carries more seasoning character, which is why East African stews taste distinct even when the method is familiar. Royco also makes actual cubes, if that is the format you prefer.

Beef or chicken Royco — which should I buy first?

Beef, if you only buy one. It suits red meat, beans, greens and githeri. Chicken is the better second pack and shines with rice, pilau and lighter sauces.
