How to Make Mandazi Step by Step
1. Mix the dough
Whisk the flour, sugar, baking powder, cardamom and salt in a large bowl. Rub in the melted butter, then add the egg if using. Pour in the warm milk a little at a time, stirring until a soft dough forms. It should feel smooth and slightly tacky, not sticky.
2. Knead and rest
Knead for about five minutes on a lightly floured surface. Cover the dough with a damp cloth and let it rest for 20 to 30 minutes. This short rest relaxes the gluten and gives you a softer, puffier mandazi.
3. Roll and cut
Divide the dough into three balls. Roll each into a circle about 1 cm thick, then cut it into triangles or diamonds. Keep the thickness even so they puff evenly in the oil.
4. Fry until golden
Heat about 5 cm of oil to a steady medium heat, roughly 170 to 180 °C. Test with a scrap of dough: it should sizzle and float within a few seconds. Fry the mandazi in small batches for two to three minutes per side, turning once, until deep golden. Drain on kitchen paper. If they brown too fast and stay raw inside, lower the heat; if they soak up oil, the oil was too cool.
