How to Cook Kenyan Chicken Step by Step
1. Season the chicken

2. Brown the chicken

In the same pot, cook the onions on medium heat for 8 to 10 minutes until soft and golden. Add the remaining garlic and ginger, then the tomatoes. Cook, stirring, until the tomatoes break down into a thick sauce, about 10 minutes.
4. Add the masala and simmer
Stir in the second tablespoon of masala and cook for one minute so the spices wake up. Return the chicken, add the hot water, cover and simmer gently for 30 to 35 minutes, until the chicken is cooked through and the sauce is thick and glossy. Taste, adjust the salt, and finish with coriander.
