At its plainest it's just the two ingredients boiled together; dressed up, it becomes a full meal fried with onions, tomatoes and spices.

How to Cook Githeri, Step by Step

1. Soak

Rinse your maize and beans, then soak them overnight (8–12 hours) in plenty of cold water. Soaking softens the maize and cuts the cooking time considerably. If you're short on time, our muthokoi (dehulled maize) needs less soaking.

2. Boil

Drain, add fresh water to cover by a few centimetres, and bring to a boil. Lower to a gentle simmer, cover, and cook until both the maize and beans are tender — usually 1.5 to 2.5 hours, topping up with hot water as needed. A pressure cooker cuts this to about 40 minutes. Add salt only near the end, so the beans soften properly.

3. Make it a meal (the githeri special)

This is where plain githeri becomes irresistible. Heat the oil, fry the onion until golden, then stir in the tomatoes and a Royco cube and let them melt into a soft sauce. Tip in your drained boiled maize and beans, mix well, and let everything cook together for 5–10 minutes so the flavours marry. Finish with fresh coriander.

Serve hot on its own, or alongside avocado, a fried egg, or chapati. Leftovers taste even better the next day.
